Mint cookies - YUM :)

I didn't post yesterday because I was so dang tired! I mean, I slept horribly the night before last, and I would guess I woke up 10 times, at the very least, from nightmares. I had the worst feeling of intense dread all night long. It was horrible! So today, I bring you gooey sweetness in the form of cookies! I make these cookies A LOT. I base my recipe off this recipe from Betty Crocker.

Ingredients
Package of Betty Crocker sugar cookie mix
Bag of Toll House dark chocolate and mint morsels
Stick of butter, softened
Egg
1/4 tsp of mint extract
6 drops of green food coloring

First thing, preheat the oven to 350 degrees. In a large bowl, combine the cookie mix, extract, butter, egg and food coloring.

Once that is mixed into a soft dough, add the bag of chips...

I know some people are put off by the color. but to me, it just makes them seem more minty to me.

After it's all mixed and nice, use a cookie scoop (and I'll be darned if mine didn't BREAK while I was making these), and put a scoop (or about a teaspoon) of dough down on the cookie sheet. Bake for 8-10 minutes...but watch closely! You want the cookie to be done, but not brown on the bottoms. I have an issue with them. A lot. I need to work on getting my cookie dough balls in better positions, so that they bake more evenly. I get some browned bottoms and gooey middles sometimes :)
